Most of you know me, and know that, at the age of 49 I suffered a debilitating stroke, lost my vision, and was told I would never recover. Today, 17 years later, I’m happier and healthier and stronger than ever before. I learned to heal myself and through my own healing process and ten years of study, I have developed a unique set of tools that I’d love to be able to share with you too! Meditation is difficult to master, some believe that it is never mastered. In our workshops we touch on techniques and practices that are time-honored, tried and true. It is a practice, and must be practiced. Come, join us! Let’s chat about what’s keeping you from hearing that inner voice.

Recipe of the Month: Insanely Easy Vegetarian Chili

NOW IS THE PERFECT TIME to try something new! Never thought of chili without meat? Try this simple recipe:

INGREDIENTS

1 tablespoon vegetable oil

1 cup chopped onions

¾ cup chopped carrots

3 cloves garlic, minced

1 cup chopped green bell pepper

1 cup chopped red bell pepper

¾ cup chopped celery

1 tablespoon chili powder

1 ½ cups chopped fresh mushrooms

1 (28 ounce) can whole peeled tomatoes with liquid, chopped

1 (19 ounce) can kidney beans with liquid

1 (11 ounce) can whole kernel corn, undrained

1 tablespoon ground cumin

1 ½ teaspoons dried oregano

1 ½ teaspoons dried basil

DIRECTIONS

Step 1

Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.

Step 2

Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally. You can put in the slow cooker and cook a little longer, or keep warm. YUM!
